Nothing says Sunday like brunch. Bacon, eggs, sausage, and all of the syrup and butter smothered breakfast carbs you can fit. But what if you have no clue how to make pancakes, waffles, or French toast? No need to resort to boxed pancake and waffle mix, or freezer burned pre-packaged French toast. Read on for three easy-to-prepare recipes for these breakfast classics that won’t disappoint.
Classic Fluffy Waffles
Fluffy and constructed with perfect syrup holding divots, waffles are a breakfast classic.
Ingredients:
- 2 eggs
- 2 cups all-purpose flour
- 1 ¾ cup milk
- ½ cup vegetable oil
- 1 teaspoon sugar
- 4 teaspoons baking powder
- ¼ teaspoon salt
- ½ teaspoon vanilla
Directions:
1. Combine wet ingredients in a medium bowl.
2. Combine dry ingredients in a separate medium-sized bowl.
3. Mix wet into dry until just combined.
4. Preheat waffle iron.
5. Spray top and bottom of waffle iron cooking surface with non-stick cooking spray. Pour in enough batter to almost fill bottom of iron (around ⅓ of a cup for standard 7” waffles, ¾ cup for a Belgian waffle maker).
6. Cook waffle until indicator light comes on, or until brown and crispy.
Mom’s Faux Buttermilk Pancakes
Using a combination of milk and vinegar to replicate the texture and tang of buttermilk, this pancake recipe is easy to make on the fly without stopping at the market for specialty ingredients.
Ingredients:
- ¾ cup milk
- 2 tablespoons white vinegar
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 egg
- 2 tablespoons melted butter
Directions:
1. Combine milk and vinegar, stir, and set aside for 5 minutes.
2. Combine dry ingredients in a medium bowl.
3. Whip egg in a separate medium bowl.
4. Add remaining wet ingredients to the egg and mix.
5. Fold wet ingredients into dry and allow to rest for 5 minutes.
6. Preheat non-stick pan over medium-low heat.
7. Brush pan with butter, then pour in batter in desired amount.
8. Cook pancakes until bubbly on the top and sides just begin to solidify, approximately 2-4 minutes.
9. Carefully slide plastic pancake turner under pancake, wiggling if necessary to scoot it onto the spatula. Flip pancake and cook for an additional 1-2 minutes.
French Toast
Crispy and creamy, French toast is fantastic served with syrup and butter, or top with jelly and powdered sugar for a twist.
Ingredients:
- 1 egg
- ¼ cup milk
- ½ teaspoon vanilla
- 4 slices of bread, any style
Directions:
1. Whip eggs, milk, and vanilla in a bread-or-bigger sized container. A shallow 9×9 baking dish works well for this application.
2. Preheat non-stick skillet over medium heat.
3. Dip bread in egg mixture, turning to coat both sides.
4. Brush pan with butter, then lower bread into pan. Allow to cook until bottom is browned, flip, and cook remaining side.
